After working as Sous-Chef for Dieter Müller and Nils Henkel in the gourmet restaurant Lerbach, Sebastian Prüßmann worked as Head Chef in the Villa Hammerschmiede. He then took on the kitchen management here in September 2013. The chef places a particular emphasis on refined vegetarian cuisine and the interplay of local and French culinary art.
"Vegetable love" – that is the name of Prüßmann’s newly created vegetarian menu. Inspired by his mentor, Nils Henkel from the Althoff Schlosshotel Lerbach, the 33-year-old Michelin starred chef serves his guests a highly concentrated four-course menu with surprising creations made of harvest-fresh vegetables from the region.
